Backcountry Cooking with the Highland Skinner

One of the things we love most at GMT Knives is seeing how our knives become part of real outdoor adventures. Our good friend and customer @espensoereng from Norway recently shared a favorite backcountry recipe with us — and of course, he put his Highland Skinner in Moss Green to work, first for field dressing his game and then for preparing the meal by the fire.

Here’s the recipe Espen recommends — simple, hearty, and perfect for enjoying with friends outdoors.


🌲🔥 Backcountry Tortillas (Serves 2)

What you need:

  • 2 large tortilla wraps

  • ~250 g wild game tenderloin (venison, elk, or reindeer)

  • A handful of chanterelle mushrooms

  • 1 small shallot

  • 1 small parsnip (or a handful of potato chips if you want it quicker)

  • A handful of fresh spinach

  • 2 tbsp sour cream

  • 1 tbsp lingonberry jam (or stirred lingonberries)

  • Salt & pepper

  • Butter or oil

How to make it by the fire:

  1. Meat over fire: Season the tenderloin with salt and pepper. Sear it in a hot cast-iron pan over the flames with butter. Cook until browned outside but still pink inside. Let rest, then slice.

  2. Forest mix: Fry chanterelles and shallot in the same pan until golden and fragrant.

  3. Crunchy topping: Slice and fry parsnip until crisp – or simply crush some potato chips if you want it fast.

  4. Spinach flash: Toss spinach quickly in the pan until just wilted.

  5. Wild cream: Stir lingonberries into sour cream with a pinch of salt.

  6. Build your Backcountry Tortilla: Warm tortillas by the fire. Add spinach, meat slices, mushrooms & onions, parsnip (or chips), and top with lingonberry cream. Roll it up and enjoy under the open sky.
